Return pork chops back to skillet; cover and simmer until pork chops are no longer pink in the center and are tender, about 45 minutes. Stir in water if mixture becomes too dry. Drop the bell pepper on top of the chops and add the mushrooms. Continue simmering until bell pepper is tender, 5-10 minutes.
